Seriously, make some this weekend. You will love it and your kids will thank you. Homemade slushies are so refreshing, hydrating and sweetened with honey {no refined sugars here}. The perfect cooling summertime drink.
Watermelons and cucumbers are in season right now, so take advantage while you can. Watermelons and cucumbers are both part of the Cucurbitaceae plant family. Both are known for being very hydrating due to their high water content. They’re also known for being very cleansing for the whole body. They also happen to be mildly sweet and delicious.
For an extra bonus, watermelon is full of antioxidants and is high in vitamin A {beta-carotene} and vitamin C and cucumbers are high in vitamin C and antioxidants. They are full of flavor and go so well together.
So go ahead and enjoy the beauty that summer has to offer. Make sure to grab some spoons and straws and slurp up those refreshing, icy slushies on a hot afternoon with someone you love.
Watermelon Cucumber Slushies
Ingredients
- 3 cups organic seedless watermelon, fresh or frozen
- 1 cup organic cucumber, peeled
- 1/4 cup freshly squeezed organic lemon juice, about 2 lemons
- 3-4 tablespoons raw light-colored honey
- 1/4 teaspoon sea salt, optional
- 3 cups ice cubes made from filtered water or coconut water
Instructions
- Prep the watermelon - cut away the rind and chop the flesh into 1" chunks. Freeze the watermelon chunks for a few hours or overnight {best}.
- Prep the cucumber - remove the skin with a peeler. Cut in half lengthwise, then remove the seeds with a teaspoon. Discard seeds.
- Add all ingredients to the blender. Blend on high speed until combined and slushy. If you're having trouble blending it, you can add a small amount of filtered water or coconut water.
- Serve immediately.
Notes
You can also make ice cubes from a mild herbal tea for some extra vitamins and minerals. It will change the flavor slightly, but it's still delicious. My kids love it both ways.
