The summertime heat has arrived … and school is out for summer {for most kiddos}.
I don’t know about you, but I always look forward to spending time with my littles during the summer. Hanging out, no school schedule, relaxing, having fun, going with the flow … I look forward to the summer rhythm.
But it’s hot out, and coming up with recipes that require little to no fuss is crucial. I don’t want to be in the kitchen cooking for hours and roasting by the oven. No thanks! Honestly, I pretty much just want cooling drinks like slushy watermelon lemonade, coconut water, iced herbal tea infusions or homemade electrolyte drinks. And bring on the homemade ice cream and fudgesicles!
If your kids are like mine, they love fun food … and snack foods are always a hit too. I try to keep their meals and snacks as nutrient-dense as possible. But it’s summer … and having fun food is a must in my opinion.
What food screams fun? Herbal Tea Jello!!!
Nourishing grass-fed gelatin is a great way to incorporate some protein into a snack. No, I’m not talking about the commercial boxes you find in the store. That’s not something that I will ever serve to my kids. Have you read the ingredient list? Refined Sugar, Artificial Flavor, food coloring like Yellow 6, Red 40, BHA … ah, no, not for my kids.
I love to make fruit juice gelatins, and I also love to make herbal tea jellow with herbal infusions. Why use herbal tea infusions? Because it’s a great way to get some extra vitamins and minerals into your kids. My kids happen to love tea, but not all kids are a fan. When you make it into jello form, it becomes fun + exciting and it’s sweet too {most kids like sweet, right?}.
Homemade Herbal Tea Jello is super easy to make!

Homemade Herbal Tea Jello
Jello is a fun treat for kids & adults. It is easy to make but the store varieties are junk. Try your hand at this herbal tea jello. Easy & good for you!
Ingredients
Herbal Tea Infusion Blend #1:
- 1 teaspoon dried spearmint
- 1 teaspoon dried lemon balm
- 1 teaspoon dried rose hips
Herbal Tea Infusion Blend #2:
- 1 teaspoon dried rose hips
- 1/2 teaspoon dried lemongrass
- 1/2 teaspoon cinnamon chips
- 1/4 teaspoon dried hibiscus flowers
- 1/4 teaspoon dried fennel seed
- 1/4 teaspoon dried lemon peel
Herbal Tea Infusion Blend #3:
- 1 teaspoon dried orange peel
- 1 teaspoon cinnamon chips
- 1 teaspoon dried spearmint
- 2 cups filtered water
- 2 tablespoons grass-fed gelatin
- 2 tablespoons light colored honey {like clover honey}
Instructions
- Boil water in medium-size saucepan or in a tea kettle.
- Bring water to a boil, remove from heat.
- Add herb mixture to water. COVER {this ensures that you receive all of the nutritional benefits from the herbs}.
- Steep 45 minutes.
- Using a fine mesh strainer, strain tea.
- Place tea in the refrigerator for about 30 minutes to cool.
- Add 2 cups herbal tea infusion to a medium saucepan.
- Sprinkle gelatin on the surface of the tea. This is called "blooming" ... basically it just means that it helps prevent lumps from forming.
- Using a fork or whisk, stir the mixture and let sit for about 2-3 minutes.
- Heat the gelatin-tea mixture over medium heat until gelatin is dissolved, about 5 minutes.
- Turn the heat to low and add the honey stirring until the honey is completely dissolved.
- Remove from heat and immediately pour into glass dish, Jello mold, ice cube tray, ramekins ... whatever you would like.
- Place in the refrigerator and chill for at least 3-4 hours or until completely set.
Notes
- I like to make the herbal tea infusion ahead of time so it's ready to go when I want to make the jello.
- I like to pour the jello mixture into a rectangle glass dish and cut the Jello into square slices. You can also use cookie cutters to make fun shapes for your littles.
